Spiced Chickpea Tacos and Cilantro Avocado Sauce

What you need

baby arugula

corn tortilla

crushed red pepper

extra-virgin olive oil
garlic

lime

rice vinegar

cilantro

avocado

ground cumin

smoked paprika

chili seasoning mix

garlic powder

ground black pepper
salt

vegetable oil

garbanzo beans
Instructions
start by preheating your oven to 400 degrees and lining a baking sheet with parchment. in a mixing bowl, add all of the chickpeas, spices, and oil. mix well to coat all of the chickpeas, then transfer to the baking sheet. bake for 15-18 minutes, until the chickpeas are crisp. make the sauce by adding all of the sauce ingredients to a blender or food processor and blending on high speed until smooth and creamy. set aside. assemble the tacos by taking a warmed corn tortilla, adding some arugula and cabbage, then the cilantro avocado sauce, then the chickpeas. top it off with some chopped cilantro & a squeeze of lime juice and enjoy!!View original recipe
