
Paleo & Vegan Cherry Cobbler
it’s actually so incredibly easy to make (unless you want to buy fresh cherries and individually pit each one like I did…) and absolutely perfect with a scoop of ice cream on top!!
What you need

cherry

vanilla extract

coconut oil

maple syrup

unsweetened almond milk

coconut sugar

baking powder

salt

tapioca flour

almond flour
Instructions
preheat your oven to 350 and either grease or add parchment to a medium sized baking dish. set aside. in a mixing bowl, whisk together the almond flour, tapioca flour, baking powder, salt, and coconut sugar. then add in the milk, maple syrup, oil, and vanilla. mix until just combined and set aside. in a separate bowl, mix the pitted cherries, lemon juice, maple syrup, and tapioca flour until the cherries are coated. pour the cherries into the baking dish and spread out evenly. top the cherry mix with dollops of the cobbler mix until all of it is spread evenly and used up. immediately place in the oven and bake for 30-40 minutes, depending on how thick the batter is. remove from oven and enjoy immediately for best results—ice cream on top is highly encouraged!!View original recipe
