One-Pot 20 Minute Creamy Sun Dried Tomato Pasta

What you need

basil

sundried tomatoes

frozen spinach

vegetable broth

pasta
dried oregano

crushed red pepper

black peppercorn

salt

garlic

shallot
extra-virgin olive oil
Instructions
start by heating your olive oil over medium heat in a large skillet. add in the chopped shallot and stir periodically until aromatic, about 5 minutes, then add in the minced garlic and spices. mix to combine and sauté for another 3 minutes. add in the uncooked pasta and chicken broth, mix well, then cover the pan and set a timer for 8 minutes, stirring once in the middle to prevent sticking. once the pasta is al dente, add in the spinach, sun dried tomatoes, & basil. mix to combine and once the spinach is fully wilted, pour in the coconut cream. give everything a stir, top with extra basil, season to taste, and serve immediately for best results. store leftovers in an airtight container in the fridge for up to 5 days. enjoy!! 💕View original recipe
