Hidden Veggie Chicken Meatballs
chicken meatballs but make ‘em veggie-packed!! 🥕🥒🥬🍅🫡 they bake in under 20 min, which is just enough time to boil some water for your fave pasta and add some sauce on top!!
What you need

avocado oil

crushed red pepper

italian seasoning

onion powder

garlic powder

ground black pepper

salt

carrot

zucchini

egg

lb ground chicken
Instructions
preheat oven to 375 degrees and grease a large baking dish or sheet pan with oil in a large mixing bowl, combine the ground chicken, eggs, shredded veggies, & spices. mix well with clean hands or a spatula to incorporate. use a large cookie scoop or clean hands to form the meatballs into balls (roll with a little oil on your hands to make them perfectly shaped) and add to the baking dish. bake for 18-23 minutes, depending on size, or until they reach an internal temp of 165 degrees. there will likely be some excess fat on the bottom of the pan which you can discard. either serve immediately or keep in an airtight container in the refrigerator for up to 4 days! 💕View original recipe
