Dairy Free Spinach and Artichoke Dip
I feel like we can all agree that spinach and artichoke dip is a 10/10 dip, but did you know you can make it dairy-free?? 🤤 When you try this, you’re going to be shocked it’s free of dairy but full of the same amazing flavors as the traditional one
What you need

pepper

salt

nutritional yeast

vegan cream cheese

extra-virgin olive oil

garlic

marinated artichokes

frozen spinach

cashew
Instructions
Add the raw cashews to a glass container and cover completely with boiling hot water. Let sit for at least 30 minutes to soften. The longer they soak the easier they will be to blend. Preheat oven to 400 degrees. Defrost the frozen spinach according to package instructions and use a cloth to squeeze out all of the excess water. Set aside. Add the soaked cashews plus about half of the water from the glass container to a food processor or blender and blend on high speed until it is a creamy, uniform mixture. Add additional warm water as needed to completely blend the cashews until they’re a smooth cashew cream. In a large mixing bowl, combine the blended cashews, spinach, artichokes, minced garlic, softened cream cheese, olive oil, nutritional yeast, salt, pepper and red pepper flakes. Mix well. Transfer the mixture into an oven safe dish (I use a 9-inch dish) and bake for 20-25 minutes, until the top is slightly golden. Cool down and serve immediately for best results.View original recipe
