
Cashew Sprinkle Cookies
A last min holiday recipe that takes about 20 min start to finish! 🫶❤️ I’ve made these cashew sprinkle cookies a few years in a row now and they’re always my fave (honestly, I’m not a big chocolate person!!)
What you need

cup cashew butter
egg

cup coconut oil

tsp kosher salt

cup oat flour

cup maple syrup

tsp baking soda

tsp vanilla extract
Instructions
preheat oven to 350 degrees and line a large baking sheet with parchment paper. in a mixing bowl, beat the eggs. mix in the cashew butter, maple syrup, and vanilla until it’s a uniform mix. add in the oat flour, baking soda, and salt and use clean hands or a spatula to incorporate the dry ingredients. once you’ve mixed as well as you can, slowly mix in the coconut oil in ~2 tbsp increments until the dough is soft but still holds its shape. the amount of oil you’ll need will depend on how drippy your cashew butter is. pour the sprinkles into a bowl or plate, roll the cookie dough into even balls (about 1.5 inches across) and toss in the sprinkles. press down on each one to cover with the sprinkles and form a cookie shape. add each to the baking sheet. bake the cookies for 10-13 minutes (they cook quickly so 10 will be enough if they’re 1.5 inch balls, you don’t want to overcook or they’ll be dry) and set aside to cool before enjoying ❤️View original recipe
