20-Minute Creamy Veggie Pasta
A quick & easy creamy gf/df pasta for a busy weeknight
What you need

coconut milk

quinoa pasta

baby spinach

nutritional yeast

paprika

dried oregano

pepper

salt

cup cherry tomato

mushroom mix

garlic

shallot
extra-virgin olive oil
Instructions
heat the oil over medium heat in a large skillet, then add the shallot and cook for about five minutes, stirring continuously, then add in the garlic and cook for another minute. mix in the mushrooms and sauté for five minutes, then add in the cherry tomatoes and sauté for another 2-3 mins. mix in the salt, pepper, oregano, and paprika and let it get aromatic, then incorporate the nutritional yeast. when the veggies fully soak up the nutritional yeast, add the spinach and pasta and mix again. once the spinach has wilted down, pour in the coconut milk, stir, and reduce heat to medium low. let the flavors incorporate and stir occasionally for 7-10 minutes, then mix in the basil and serve immediately for best results.View original recipe
