start by preheating your oven to 400 degrees and lining a baking sheet with parchment. in a mixing bowl, add all of the chickpeas, spices, and oil. mix well to coat all of the chickpeas, then transfer to the baking sheet. bake for 15-18 minutes, until the chickpeas are crisp. make the sauce by adding all of the sauce ingredients to a blender or food processor and blending on high speed until smooth and creamy. set aside. assemble the tacos by taking a warmed corn tortilla, adding some arugula and cabbage, then the cilantro avocado sauce, then the chickpeas. top it off with some chopped cilantro & a squeeze of lime juice and enjoy!!
